Pick high-quality and sustainably-sourced fresh cuts

No cooking method can transform a low-quality, store-bought cut into a freshly-caught filet. Fresh cuts of wild-caught seafood will deliver the best results. Avoid farm-raised options and look for fish that is firm, moist, and has a clean smell. 

Preheat your pan or grill

Preheating your pan fully is key to helping the fish cook evenly, develop a crispy exterior, and prevent sticking. Add the oil after it’s been preheated and let it heat until it’s glistening before adding your fish.

Season your fish

Adding salt, pepper, and other seasonings to your fish before cooking is a must to enhance its flavor. Lemon juice, herbs, and spices also add a delicious kick.

Pat seafood dry before cooking

Excess moisture cause the fish to become mushy and overcooked. Use paper towels to gently pat the surface of the fish before placing it in the pan.

Don’t overcook your fish

Overcooked fish is dry and tough. Cook your fish until it is just cooked through and still moist and flaky. Using a meat thermometer can help you determine when your fish is fully cooked. For most types of fish, an internal temperature of 145°F (63°C) is recommended.

Start skin-side down

Leave the skin-side down for around 3/4 of the total cooking time, and flip it over once your spatula can slide underneath. Cooking the other side for only a few minutes will give it a crisp, flaky finish.

Avoid overhandling the fish while cooking otherwise you risk it falling apart and not browning to a golden color.

Avoid overcrowding your pan

Cooking a few filets at a time creates a more crispy exterior and a flaky, evenly cooked interior. When the pan is overcrowded, the temperature of the oil drops, causing the fish to absorb more oil and become greasy and overcooked.
